Red curry with chicken and veggies cooked in coconut milk served over brown rice
Ingredients
- 1 1/2 cups Brown Rice
- 1 2/3 cups Trader Joe's Light Coconut Milk
- 1 middle size Red Pepper
- 1 medium Yellow Squash (aldi)
- 1 medium Onion, Sweet
- 2 Whole Carrots
- 0 cup Light Brown Sugar
- 8 oz Chicken Breast
Directions
cook brown rice while steaming veggies in a large frying pan. cook chicken separately. Once chicken and veggies are cooked combine the veggies and chicken and saute in the light coconut milk. Add red curry paste and spices. serve over brown rice
