Lynda's Quinoa Salad

Healthy grain/seed/nut/veggie salad
Ingredients
- 1 1/2 cups Low Sodium Chicken Broth
- 1 cup Quinoa, Uncooked
- 1/2 cup Peppers, Sweet, Red
- 1/2 cup Onions Red Raw
- 1 1/2 tsp Mild Curry Powder
- 1/4 cup Cilantro
- 1 yields Lime Juice Raw
- 3/4 cup California Sliced Almonds
- 1 cup Dried Cranberries
- 1/2 cup Matchstick Carrots
Directions
Bring chicken broth to a boil. Add Quinoa and simmer on low until liquid is absorbed (15 -20 minutes)
Place in fridge until cold.
Chop and mix all ingredients together. Add to cold Quinoa. Serve cold.
