This mac and cheese strays a little bit from a traditional flavor of the boxed version, but the texture and creaminess will have you satisfied in the exact same way. Recipe and Image: Sherrie Castellano.

1. Boil the pasta according to package instructions. In the last minute of cooking, toss in the peas. Drain and then return the pasta to the pan.

2. While the pasta cooks, prepare the cheese sauce. In a blender, whiz together the cashews, almond milk, salt, pepper, garlic and nutritional yeast until smooth. Pour the sauce over the pasta and cook for one minute on low. Serve with a sprinkle of chives (optional).
