This is an easy noodle dish with a healthy twist!

Directions

Chop all the vegetables and set them aside. Spray a pan with cooking spray and stir fry onions and potatoes first and the add the rest of the vegetables. Fill a separate bowl with hot water and put the block of noodles in the hot water and cover for 5 mins. When the noodles are tender, drain the water and add the noodles to the stir fried vegetables. Now add the seasoning mix to the noodles and vegetable mixture. Stir it in and enjoy!
