Make this pasta in advance and store it overnight in the fridge. For lunch, you’ll just need to reheat this DIY refrigerator meal in the microwave until steaming hot.

Ingredients

Directions

1. Prepare pasta according to package directions. Drain, reserving 3 tablespoons of the cooking liquid.
2. In a large bowl, toss the drained fusilli, marinara sauce, tomato, baby kale (or spinach or arugula), vinegar, salt, hot pepper flakes and the 3 tablespoons cooking liquid. Transfer to a microwave-safe serving bowl.
3. Sprinkle with goat cheese, cover and chill in the refrigerator overnight.
4. When ready to serve, remove cover. Microwave on HI for 1 minute, or until fully heated through, and serve.
