Manicotti Stuffed w/ Spinach & Cheese

Healthy variation on stuffed manicotti.
Ingredients
- 2 cups Fat Free Cottage Cheese Small Curd
- 2 cups Chopped Frozen Spinach
- 1/2 cup Onions
- 1 egg
- 1 tsp Parsley, Freeze-dried
- 1 tsp Red Pepper Flakes
- 1 tsp Pepper, Black
- 1 tsp Garlic Powder
- 1/4 cup shredded parmesan
- 1 1/2 cups Mozzarella Shredded Cheese
- 3 cups Tomato Basil Garlic Spaghetti Sauce
- 1 1/2 cups Tap Water
- 12 pieces dry Manicotti Pasta
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, combine cottage cheese, spinach, onion and egg. Season with parsley, red & black pepper and garlic powder. Mix in 2/3 cup mozzarella and 1/3 cup Parmesan. In a separate bowl, stir together spaghetti sauce and water.
3. Spread 1 cup sauce in the bottom of a 9x13 inch baking dish. Stuff uncooked manicotti shells with cottage cheese mixture, and arrange in a single layer in the dish. Cover with remaining sauce. Sprinkle with remaining mozzarella and Parmesan.
4. Bake in preheated oven for 45 to 55 minutes, or until noodles are soft.
