High in natural saturated fats, coconut oil can increase good cholesterol and promote heart health. You’ll also add a sprinkling of sea salt and maple syrup to complement the nuttiness of the acorn squash.

Directions

1. Depending on how big your fry pan is, you might need to do two batches so use the oil and maple syrup accordingly.
2. Place 2 teaspoons of coconut oil into a fry pan over medium heat.
3. Add squash slices in a single layer and sprinkle lightly with sea salt.
4. Cook with a lid until brown on one side, and flip to the other side, cooking for two more minutes.
5. Add the maple syrup and mix to coat. Cook for a couple minutes more.
6. Repeat if necessary to use up all of the squash slices.
