maxx's chicken caccitore

Chicken Caccitore, low fat served over pasta is hearty and guilt free
Ingredients
- 8 oz Skinless Chicken Drumstick
- 4 Skinless Chicken Thigh
- 12 oz Skinless Chicken Breast
- 398 ml Diced Tomatoes Canned
- 2 tbsp Tomatoes Paste
- 1 1/2 tbsp Olive Oil
- 1 1/5 tbsp whipped butter, salted
- 1 oz Mushrooms White Microwaved
- 1 medium raw Green-bell Pepper
- 18 3/4 g Plain White Flour
- 1 cup Riesling White Wine
- 1 oz Brandy
- 1 tsp Capers
- 1 cup Cooking Stock Chicken
- 1 tbsp Balsamic Vinegar
- 3/4 tsp Granulated Sugar
- 1 1/2 tbsp Italian Seasoning
- 1/4 tsp Pepper*
- 3/4 tsp Salt
- 1/2 tsp Red Pepper Flakes
Directions
add flour and dry seasonings into a zip-lock, add the chicken pieces and shake until coated. Heat skillet with cooking spray and oil until smoking, add the chicken and fry until browned (about 3 min each side), if it starts to burn add some chicken stock as needed. Remove chicken set aside.
Add butter to the pan with remaining drippings, then add garlic and onions cook until tender, add chicken broth cook bell peppers and canned tomatoes until boiling, add white wine and mushrooms, and tomato paste simmer for 10 minutes, add chicken back in to mixture, add a bit more chicken stock and balsamic vinegar and capers and sugar. Transfer all the ingredients into a slow cooker, cook on high for 2 1/2 hours. Serve over whole wheat spaghetti pasta, or rice if desired.
