Ingredients:

2 cups quinoa, cooked
1 cup grape tomatoes, halved
1/2 cup cucumber, diced
1/2 cup Kalamata olives, pitted and chopped
1/2 red bell pepper, diced
1/4 cup feta cheese, crumbled
3 tablespoons extra virgin olive oil
1/2 teaspoon sea salt
Fresh pepper, to taste
1 teaspoon oregano
Juice of 1/4 lemon

Directions:

Add all ingredients to a bowl and mix well. Refrigerate before serving.

Makes 5 servings

Per serving: 354 calories, 15g fat, 2.9g saturated fat, 11g protein, 1.8g sugars, 44g carbohydrates, 394mg sodium

    My wife made this for dinner tonight - following the recipe exactly as written. WOW! This was really good. So good in fact, after dinner my wife went back to the grocery store to pick up more ingrediants so we both can have some for lunch at work this week! I WIN!
