Mediterranean Feta Quinoa Salad

This Mediterranean mix is not only delicious, it’s also full of energizing B vitamins, muscle-relaxing magnesium, and blood-sugars-balancing fiber, says Peggy Kotsopoulos, author of Must Have Been Something I Ate.

INGREDIENTS

SERVES 5

  • 2 cups Quinoa, Cooked
  • 1 cup Grape Tomatoes
  • 1/2 cup Cucumber
  • 1/2 cup Kalamata Olives
  • 1/2 cup Red Bell Peppers
  • 1/4 cup Feta Crumbled Cheese
  • 3 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Sea Salt
  • 1 tsp Oregano, Ground
  • 1 whole yiel LEMON Juice, Fresh Squeezed

DIRECTIONS

1 Ingredients:
2 cups quinoa, cooked
3 cup grape tomatoes, halved
4 /2 cup cucumber, diced
5 /2 cup Kalamata olives, pitted and chopped
6 /2 red bell pepper, diced
7 /4 cup feta cheese, crumbled
8 tablespoons extra virgin olive oil
9 /2 teaspoon sea salt
10 Fresh pepper, to taste
11 teaspoon oregano
12 Juice of 1/4 lemon
13 Directions:
14 Add all ingredients to a bowl and mix well. Refrigerate before serving.
15 Makes 5 servings
16 Per serving: 354 calories, 15g fat, 2.9g saturated fat, 11g protein, 1.8g sugars, 44g carbohydrates, 394mg sodium
