Directions

Preheat oven to 350 degrees. Prepare green peppers by removing the top and cleaning out the insides. Rinse/dry. Prepare brown rice according to package directions. Brown the ground turkey and add taco seasoning according to directions. When meat is done, add rice and salsa. Mix well. Fill each pepper with meat/rice mixture and place in casserole dish. Bake until peppers are to your liking. When done, you can top with reduced fat sour cream, shredded cheese and salsa if desired.

Hint: Add a bit of water to the casserole dish to speed cooking time. When preparing meat, put empty peppers in oven to give them a head start in cooking.
