This bowl is full of flavor depth, packed with nutritional richness and loaded with Lebanese delight. Fresh parsley is the leafy green of choice and rotisserie chicken accented with cinnamon provides protein. Minty bulgur and a lemony Greek yogurt-based dressing make this dish unique and delicious!



1. In a small saucepan, add bulgur, shallot, 1 3/4 cups water, and 3/4 teaspoon salt. Bring to a boil over high. Cover, reduce heat to low, and simmer until liquid is fully absorbed, about 10 to 12 minutes. Fluff with a fork, transfer to shallow dish, and chill. (Note: This step can be done in advance.)
2. Stir mint into chilled bulgur.
3. In a liquid measuring cup, whisk together yogurt, lemon juice, oil, and 1/8 teaspoon salt. Set aside.
4. Remove bone from chicken. Slice or dice chicken and season with cinnamon.
5. Arrange among two bowls the bulgur, tomatoes, parsley, chicken (preferably warm), and almonds (preferably pan-toasted). Sprinkle tomatoes with remaining 1/8 teaspoon salt.
6. Drizzle with yogurt dressing, and serve.
