Mike's Homemade Roasted Garlic & Potato Soup

Fresh roasted garlic and yukon gold potato soup
Ingredients
- 32 oz Yukon Gold Potatoes
- 2 tsp Pure Olive Oil
- 5 oz Onions
- 2 oz Celery
- 2 oz Baby Carrots
- 1 oz Garlic
- 3 cups Cooking Stock Chicken
- 1/4 cup Carnation Evaporated Milk
- 1/2 tbsp Butter
- 16 oz Purified Water
Directions
roast garlic at 375 degrees for 40 minutes. Sautee onion, celery and carrots until soft on medium heat about 10 minutes in oil and butter. Add potatoes, roasted garlic, stock, water and 1 tsp Herbes de Provence. Bring to boil, lower heat to medium low and cook until soft about 20 minutes. Use immersion blender until totally smooth and evaporated milk and salt/ pepper to taste.
