Mini Bison Meatloaf Muffins

Ingredients
- 1 lb Ground Bison Meat
- 1 box Stove Top Savory Herbs Stuffing Mix
- 2 egg
- 2 tbsp Dijon Mustard
- 1 tbsp Worcester Sauce
- 1/4 cup Parmesan, Romano \u0026 Asiago Shredded
- 1/4 cup Half-n-half
- 1 cup Celery
Directions
Preheat oven to 350. First grind up about six juniper berries and six all spice berries in the mortar and pestle. Mix together all ingredients except bison, stuffing and cheese. Then mix in bison by hand until thouroughly mixed, then finally add studding mix. Spray of brush mini muffin tins with a light coating of olive oil. Spoon mix into tins, just below the top (about a heaping teaspoon). Bake at 350 for 12 minutes. Pull out,sprinkle tops with grated asiago cheese and return to oven for 3-4 more minutes. Serve with a salad and a little dijon mustard for dipping.
