Mini chili pancakes (1 serving = 4 pancakes)

Some fun and healthy pancakes. Sweet chili sauce is optional.
Ingredients
- 1 cup Whole Wheat Flour
- 1 1/2 cups Unsweetened Original
- 1 egg
- 2 tbsp Chili Jelly
- 1 tsp 100% Juice Lemon Juice
Directions
1. Mix all the ingredients in a small bowl, making sure that the flour does not clump.
2. On a small non-stick toast pan (approximately 5x5" or 13x13 cm) on medium heat, fry the pancakes. If you are using a non-stick pan, oil will not be necessary, but you may add 1/2 a teaspoon of butter for more flavour if you so desire.
3. As you finish the pancakes, put them in a pile on a plate.
4. Finito! Serve with anything you want (vegetables, ground beef, anything salty) or eat them plain. Very good with a little hot sauce.
