Mini Shells with Mascarpone-Walnut Sauce

A creamy, delicious pasta dish with toasted walnuts and a savory, cheesy sauce.
Ingredients
- 1/2 box Pipette Pasta
- 1/4 cup Green Onion
- 2 tbsp Butter
- 4 oz Mascarpone
- 1/4 cup Milk-1%
- 2 tbsp Parmesan, Shredded Cheese
- 1/4 cup Walnuts
Directions
Cook pasta according to package directions and drain, reserve. While pasta cooks, heat butter in a medium saucepan over medium-high heat, cook chopped green onion for 1 minute. Reduce heat to low and add mascarpone cheese, stirring until cheese melts. Add the milk and stir until the sauce is smooth. Stir in Parmesan cheese. Toss cooked pasta with sauce, divide into bowls and top with toasted walnuts and extra parmesan.
