Mini Veggie Black Bean Sliders

delicious little mini black bean and veggie burgers, perfect for your next grill out! Perfect for on top of slider buns or on a salad. Add a chipotle ranch or some hot sauce to give a kick!
Ingredients
- 3 cups Black Beans
- 3/4 oz Baby Carrots
- 1 1/2 cloves Garlic Clove
- 1/8 cup Onions
- 1/4 medium raw Green-bell Pepper
- 1 Extra Large Eggs
- 1/3 cup Panko
- 1/4 cup Mild Cheddar Shredded Cheese
- 1/8 cup Non-fat Plain
Directions
mash beans in a bowl.
grate in onion, green pepper, garlic, and carrots,
add egg, panko, cheese and yogurt, and mix together
adding salt and pepper.
once the mixture starts to come together
form into 8 mini patties
place into a saute pan, let cook for about 4 mins per side
Add to a bun with some chipotle mayo or top a salad for another healthy option.
