Mint Brownie Cookies

Splice between brownies and mint chip cookies!
Ingredients
- 340 g Real Semisweet Chocolate Chips
- 22 2/3 tbsp Bake Shoppe Mint Chocolate Chips
- 8 tbsp Butter, Unsalted
- 1 1/2 cups All Purpose Flour (fyfga)
- 1/2 tsp Pure Baking Soda
- 1/2 tsp Sea Salt
- 168 g Extra Large Eggs
- 24 tsp Sugar, White, Granulated
- 2 tsp Pure Vanilla Extract
Directions
2 cups semisweet chocolate chips
1 stick unsalted butter
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt
3 extra large eggs
1/2 cup white sugar
2 tsp vanilla extract
2 cups mint chips
Preheat oven to 350.
Melt 2 cups semisweet chips with 1 stick of diced up unsalted butter in a double boiler or in short bursts in a microwave, being careful not to burn chocolate. Set aside to cool.
Mix flour, baking soda and salt well. Set aside. In another bowl, beat eggs, sugar and vanilla together. Add cooled chocolate and butter mixture. Gradually add in dry until mixed well.
Fold in mint chips.
Put batter in fridge to cool for 30 mins. Once ready, put spoonfuls of batter on baking sheet and bake at 350 for roughly 9 mins.
