Ingredients

  • 10 Pitted Dates
  • 1 1/2 cups Unsweetened Coconut Milk
  • 1/2 whole Avocado
  • 1/2 cup Baby Spinach
  • 20 leaf fresh mint leaves
  • 3/4 tsp pure vanilla extract
  • 1/2 tsp peppermint extract
  • 1 tbsp Organic Cacao Nibs

Directions

1. Add the dates, coconut milk beverage (well chilled), avocado, spinach, mint leaves, vanilla extract, peppermint extract and, if using, chocolate extract to a blender. Cover and puree on high speed until smooth and creamy, at least 2 minutes. (Hint: If desired, puree with a few ice cubes for an extra-chilled shake.) Add the cocoa nibs and pulse a few times to evenly combine.

2. Serve in chilled glasses. Garnish with additional cocao nibs or fresh mint, if desired.
