Mixed Vegetable Omlette

Definitely a spiced up version of your regular routine Omlette and contains 2 servings of vegetables.
Ingredients
- 1 oz Red Bell Pepper, Raw
- 1 oz Orange Bell Pepper
- 1 oz Yellow Bell Pepper
- 1/2 oz Baby Bella Mushrooms
- 2 oz Spinach
- 1 egg
- 2 tsp Olive Oil
- 2 tbsp Organic Salsa, Medium
Directions
1.Heat the Oil in the pan for 30 seconds
2. Add the Mushrooms and saute for a 1 min
3. Add the spinach and saute for a 1 min
4. Add all the diced color peppers and saute for min
5. Break the Egg in a bowl and whisk well
6. Pour the egg mixture on the sauteed vegetables in the pan
7. Let it simmer for 1 min and then turn carefully
8. Let it cook on the Other side for 1 min and turn off the heat
9. Place the Omlette in the plate and garnish with fresh mint or coriander leaves and serve with the side of salsa. Yum, Yum, Yum...!
