MJB Spinach Egg Bake

Veggie and egg bake
Ingredients
- 3 100% Whole Wheat Dinner Rolls
- 3 cups Spinach, Raw
- 1/2 medium Yellow Onion
- 6 medium mushrooms Crimini Mushroons
- 1/2 cup Sundried Tomatoes
- 6 Eggs, Large
- 1/2 cup Nonfat Plain Yogurt
- 1 tbsp Vegetable Oil
- 2 cups Part-Skim Mozzarella
- 1/2 tsp Nutmeg, Ground
- 1/2 tsp Salt
Directions
Set oven to broil on HI. Lightly spray 9X13 baking pan with Pam. Cube dinner (or any bread of choice) and spread in bottom of pan.
Place in oven and toast until lightly browned. Remove.
Dice onions, mushrooms and sun-dried tomatoes. In skillet on stove-top, add vegetable oil and heat. Toss in onions and saute until slightly translucent and brown on edges. Add mushrooms and sun-dried tomatoes and cook for 2-3 minutes. Spread mixture on top of toasted bread in baking pan.
Layer on chopped spinach and top with mozzarella cheese.
In large bowl, beat 6 eggs until blended. Add plain yogurt and mix well. Add 1/2 tsp nutmeg and salt. Beat again.
Pour egg mixture evenly over bread and veggie. Place in preheated oven at 350 degrees and bake for 15-20 minutes.
