Mo's Big Apple Pancake

Apple eggs and pancake. Easy to fix and filling too. Serve with walnuts, dried cranberries , syrup, whipped cream, yogurt, cinnamon sugar. Great any time.

Peel and core apple cutting into 1/4 inch wedges. Position rack in middle of oven and heat to 450 degrees. Melt butter in a medium skillet (iron skillet works the best)over medium heat, then transfer 1 tablespoon to a blender. Add apple wedges to skillet and cook turning once until they start to sften, 3 to 5 minutes (will be browned and carmelized)arrange around skillet. Meanwhile, mix milk, flour, eggbeater,sugar, vanilla, and salt with butter in blender. Blend until smooth. Pour over apples ind transfer to oven. Bake for 15 minutes or until pancake is puffed and golden. Dust with confectioners sugar and serve immediately.
