Muffulettas Lite

Light version of a New Orleans favorite.
Ingredients
- 2 tbsp Brown Rice Vinegar
- 1 tsp Divina Extra Virgin Olive Oil
- 1/2 tsp Oregano, Dried
- 2 oz Uncured Black Forest Ham
- 1 oz Columbus Italian Dry Salame
- 1 slice Natural Provolone
- 1/2 cup Cremini Mushrooms
- 1/2 cup Red Bell Pepper
- 1/4 cup Green Onion
- 1/4 cup Red Onion
- 1/4 cup Chopped Celery
- 2 French Bistro Roll
Directions
Small dice ham, Salami, provolone, mushrooms, bell pepper, green onion, red onion and celery. Combine in bowl with vinegar, olive oil and oregano and mix well. Cover and chill overnight.
Cut the top third off the 6 inch roll. Use the tines of a fork to mark a line around the inside edges of the roll, leaving about a 1/2 inch shell.
Remove the bread from the center of the roll with fingers. Pack the cavity in the roll with half of the meat mixture. Add top of roll.
