Mushroom Artichoke Saute over Pasta (or rice)

veggie mix sauted/seared and placed over pasta, rice or bed of lettuce for those who may be watching their carbs
Ingredients
- 1 cup Portobello Mushroom
- 1/2 cup Artichoke Hearts (canned)
- 2 Plum Tomato
- 1/2 medium Onion, Sweet
- 1 tbsp Extra Virgin Olive Oil
- 1 1/3 cups Whole Wheat Pasta
- 1 clove Garlic
- 1 tbsp Balsamic Vinegar
- 1 tsp Rosemary, Dried
Directions
>chop all veggies - bite sized (mince the garlic)
>heat oil in large pan
>boil water for pasta
>saute onions & garlic until tender, then add other veggies & sprinkle balsamic vinegar & seasonings over top
>cook pasta while occasionally stirring veggies (lower heat if they finish before pasta is done)
>Serve Warm...Parmesan to taste
***can make over rice or lettuce
***can use any tomato type
***rosemary is what I use the most...but Tarragon is great too...and the amount is really just a guesstimate
