1. Heat the olive oil in a large pot over low heat. Stir in the onions and garlic and saute for about five to seven minutes until translucent and slightly caramelized. Turn up the heat to medium, pour in the red wine, stir and let cook for one minute.

2. Then add in the thyme leaves, salt, pepper, mushrooms, soy sauce and broth. Simmer for 10 minutes or until the mushrooms are tender and cooked through. In a small dish, whisk together the flour and warm water and then pour that mixture into the gravy. Stir and simmer as it thickens, for about one to two minutes more.

3. Serve warm over mashed potatoes or biscuits.
