This veggie-packed breakfast omelet is loaded with fiber, protein and other nutrients to give energy throughout the day.

1. Combine eggs and beat lightly.
2. Using a cooking spray, cook eggs in non-stick pan.
3. Add cottage cheese, mushrooms and tomatoes in the center of omelet.
4. Cook until eggs are set and fold over.

  • I'm all about omelets, but this one was bland. The tomatoes also made the omelet very watery. To add flavor to my omelets, I typically add oregano or basil, red or green peppers, and even a small sprinkle of parmesan (rather than 1/2 c of cottage cheese).

    For an omelet that's delicious AND healthful, this is a great one. Although I'm sure we'd all prefer some rich, gooey cheese instead of a low fat cottage cheese in an omelet, it does add texture and some richness to the flavor. I would not leave it out. I did add about a half cup of chopped baby kale along with the mushrooms, as it's always in my fridge now and my quick, healthful addition to pretty much everything these days. I think this recipe is a good basic vehicle for any of your own favorite veggies. Being from New Mexico, I plan to add onions and fresh roasted green chiles to it next.
