Mustard Glazed Carrots

Mustard Glazed Carrots

Raw carrots are a common snack food, and they’re definitely a better choice than chips or crackers. But cooking them boosts their beta carotene content, which is important for eye health.

INGREDIENTS

SERVES 6

  • 10 medium raw carrots
  • 2 tbsp Mustard, Whole Grain Dijon
  • 2 tbsp salted butter
  • 1 tbsp Dijon Mustard
  • 1 tbsp Honey

DIRECTIONS

1 Heat a large pan over medium-high heat
2 Add 1 tablespoon of butter and stir gently to melt
3 Add carrots, stir, and place a lid on pan for them to cook for several minutes
4 Stir again, and add 1-2 tablespoons of water if they are sticking
5 Cook until tender-crisp, up to five more minutes
6 Add remaining ingredients and stir thoroughly to combine
