Mysticl's Cauliflower Mashed Potatoes

Mashed potatoes with up to half the calories and carbs but ALL the fiber and nutrition. My family didn't notice the difference until I told them, and even when they knew they STILL liked them. This recipe is portioned for one but obviously you can multiply it by as many servings as you'd like. A real winner.
Ingredients
- 1 red potato
- 100 g Cauliflower,raw
- 1 tsp Salted Butter
- 1 tbsp Chive & Onion Cream Cheese
Directions
In a small covered saucepan saute steam cauliflower florets in the butter over low heat. I use slightly less than half by weight cauliflower to potato ratio. When cauliflower is very tender (test with a knife) remove lid and evaporate any remaining moisture leaving only butter and cooked cauliflower. Mash and reserve. ( I often use my mini food processor on my immersion blender to puree the cauliflower. Doing so makes it almost impossible to detect them in the final mash except by taste and that's very subtle.
Peel and boil potatoes in water until tender. Drain and add cauliflower puree and cream cheese. Mash together with a fork until smooth. season with a little salt and pepper to taste.
Serve as you would mashed potatoes.
Note: cream cheese is optional. You can reduce fat and calories by omitting or you can sub in a different flavour if you like, garlic herb is nice, so is sour cream, chives .. etc ... sky's the limit.

I steamed the cauliflower in only the small amount of butter without water as suggested. I baked the potato. After baked I simply mashed it with a fork, added the steamed cauliflower and the rest. I thought it was really good. I had never just steamed my cauliflower in a tiny bit of butter before, the moisture in the cauliflower created enough steam to cook it, which took a little longer on low, but oh so worth the flavor.
