I love french onion soup. The traditional recipe uses REAL gruyere cheese. Gruyere cheese does NOT string like mozza or swiss so it makes eating this soup a LOT easier and it tastes better too! Also I like to cut my onions nice and chunky instead of in rings as this also makes it easier to eat. The current recipe below does not include either bread I use (toasted) as a crouton on top of the soup which changes every time I make this based on what type of bread I have on hand, nor does it include the cheese, as I like to track those separately and I often just eat this plain without either the bread or the cheese, simply as an onion soup. .

Directions

Saute onions and salt with butter in a large dutch oven until translucent and beginning to brown, about 30 minutes.

Add thyme and bay leaf with beef and chicken broth. Stir.

Add red wine vinegar and red wine. Simmer on LOW for about an hour.

Put into oven proof bowl. top with toast and cheese and place briefly under broiler until cheese melts
