I’ve swapped corn chips for purple sweet potatoes and sour cream for Greek yogurt, so the end result is healthier than your normal nachos. I didn’t add beans because the sweet potatoes are so high in carbs, but you can throw those on too if you want! Just add them along with the cheese and hot sauce before baking.



4 cups roasted purple sweet potato fries (*see recipe below)
1/2 cup grated sharp cheddar cheese (may substitute any other preferred cheese)
1/2 cup chopped avocado
1/4 cup Greek yogurt
3 tbsp salsa
2 tbsp hot sauce

1. Preheat oven to 375 degrees F
2. Place fries closely together, overlapping slightly, on a parchment lined baking sheet
3. Add cheese and hot sauce to fries
4. Bake for 10 minutes, until cheese is melted and slightly golden
5. Remove from oven and top with salsa, avocado, and Greek yogurt

*This recipe uses roasted purple sweet potato fries, which are cooked using my "base recipe":

5 cups (about 2 medium) sweet potatoes, sliced into 1/4 inch wide strips
1 1/2 tbsp algae oil
1/2 tsp salt

1. Preheat oven to 415 degrees F
2. Drizzle half the oil onto a parchment lined baking sheet
3. Lay sweet potato strips onto baking sheet in even lines
4. Drizzle salt and remainder of oil over strips
5. Roast for 35 minutes, flipping halfway through
