Nigella Lawson Chocolate Banana Muffins

A Change of Pace for Breakfast on the Go. These can be frozen for later. Adapted from Nigella Lawson.
Ingredients
- 3 medium Banana
- 1/2 cup Vegetable Oil
- 2 egg
- 1/2 cup Light Brown Sugar
- 1 1/2 cups All-purpose Flour
- 3 tbsp Cocoa Powder, Natural Unsweetened
- 1 tbsp Baking Soda
Directions
Preheat the Oven to 400F and line a muffin pan with paper muffin cups.
In a mixing bowl mash the banana's with hand, or freestanding mixer.
While beating of mashing, add oil then eggs and sugar.
Mix in the flour, cocoa powder, and baking soda together and add to the Banana Mixture, then spoon it into prepared papers.
Bake int he preheated oven for 15-20 Minutes. The muffins should be dark rounded and peeking proudly out of the paper cups. Let cool slightly in their pan before moving to wire rack.
