Nighty night soup - low cal - tasty stuff
Ingredients
- 1 cup Squash, summer, zucchini, includes skin, cooked, boiled, drained
- 1 cup Lettuce
- 1 tbsp Olive Oil
- 1/2 Tomatoes
- 1/5 cup Lemons
Directions
Prep:
Wash and chop zucchinis (usually 2-3 large)
& chop lettuce
Cookin:
Place small deep pot on stove and add 3/4 litre of water.
When water boils add zucchinis, lettuce and allow to boil for 5-10 mins.
Then, blend all ingredients into creamy paste. Place back into pot and then blend tomato into pulp. Add into pot and then add olive oil and boil for another minute.
Serve with lemon.
