No-Bake Carrot Cookies

Threw these together as a Clif Bar alternative.

Mix dry ingredients. Melt coconut oil over medium-low. Removed from heat and mix in baby foods & carrots. Combine wet & dry. May need to add 1-3T water to moisten. Add desired seasonings (cinnamon, cloves, ginger, and nutmeg work well). Divide into 10 balls (~41 grams each), and shape into desired form. Pop in the fridge for a few hours (or overnight) to harden up - will still be moist.
Could also add raisins, walnuts, dried apples....
