Noel's New England Chowder

A traditional clam chowder with milk, salt pork, potatoes and ship's hard tack (tact) biscuits!
Ingredients
- 1 1/2 cups Chopped Clams
- 3/4 cup Whole Maine Cherrystone Clams
- 4 cups Raw Whole Milk
- 3 medium Yukon Gold Potatoes
- 2 cups Fingerling Potatoes
- 2 oz Cured Salt Pork
- 4 tbsp Plugra European Style Butter
- 1 tsp Atlantic Sea Salt
- 1 tbsp Pepper, White
- 150 g Yellow Onion Large
- 3 1/2 oz Barley Hardtack
Directions
Saute small slivers or cubes of salt pork in bottom of cast pot with butter until browned, then add chopped onions and continue to brown. Add par-boiled potatoes chopped into large chunks / cubes. Add salt, pepper & milk and chopped pieces of hard tact. (hard tact must be soaked overnight in milk and clam juice to soften). Finally, add clams and juice and allow to simmer (NOT BOIL) for 10-20 minutes. Best if let to stand for 1-2 days prior to eating. Can add garden parsley for garnish and taste.
