Nut Kiffles

Cookie with nut filling.
Ingredients
- 1 lb Butter, Salted
- 4 cups Plain Flour
- 1 lb walnuts
- 3 Eggs
- 3/4 cup Fat Free Evaporated Milk
- 1 cup Sugar
- 2 tbsp Butter, Salted
- 1 tsp Vanilla
- 2 tsp Baking Powder
- 1 cup Confectioners' Sugar
Directions
Cut butter into flour & 2 tsp of baking powder as for pie crust. Add 3 egg yolks, evap milk,
1 tsp vanilla. If dough too sticky add a little flour. (Dough should be soft) Work dough until smooth.
Divide dough into 8 balls. Roll each into a circle. Cut into 8 pie shaped wedges. Add spoonful of nut filling and roll each cookie starting at wide end. Bake at 350-375 for 20-25 minutes on ungreased cookie sheet. (I use silicon liners or parchment paper)
Nut filling: 1# walnuts chopped fine. Beat three egg whites, add 1 cup sugar and 2T melted butter. Mix well.
Roll in confectioners sugar.
