Oat crusted chicken parm

A healthy twist on chicken Parmesan.
Ingredients
- 1/2 cup Quick Oats
- 1 tbsp Flax Seed
- 12 oz Chicken Breast
- 1 large Egg White
- 2 tbsp Extra-virgin Olive Oil
- 1 slice Sargento Reduced Fat Pepper Jack Cheese
- 1/2 cup Marinara Sauce
Directions
1. Grind the quick oats in a coffee grinder or blender to produce a flour like texture.
2. Mix the flax seed into oat flour along with salt, pepper, and any other spice you might like.
3. Beat egg white in separate bowl.
4. Divide chicken breasts into 4oz portions.
5. Dip chicken breasts in egg white, then coat with oat flour mixture.
6. Heat 1 tbsp olive oil in frying pan.
7. Place chicken in frying pan and cook on med-high heat for about 5 minutes.
8. Flip chicken and add the other tbsp olive oil to pan.
9. Cook for another 5 minutes or so.
10. Once fully cooked, transfer chicken to oven safe container.
11. Coat each piece with marinara sauce and 1/4 slice of reduced fat pepper jack.
12. Bake until cheese is bubbly.
