Orange Chocolate Bean cupcakes

Chocolate muffins made with bean flour, great for a meal too
Ingredients
- 1 cup Rice Flour, Brown
- 1 cup Garbanzo Bean Flour
- 3/4 cup Organic Sucanat Free-Flowing Organic Brown Sugar 1 lb
- 1/2 cup Cocoa Powder
- 1/2 cup Organic Chocolate Chips
- 1/4 cup Flax Seed Meal Certified Organic
- 2 tsp Baking Powder
- 1/2 tsp Sea Salt
- 1/2 cup Raw Almonds
- 250 g Apple
- 1 1/2 cups Water
- 1/3 cup Freshly Squeezed Orange Juice
- 2 tbsp Orange Zest
Directions
Preheat oven to 350
combine the first eight dry ingredients
Blend the almonds into a coarse flour
core the apples and blend with almonds, water, and orange juice
Pour wet ingredients into the dry ones, sprinkle in the freshly grated orange zest, and mixed until just combined
Bake 45-50 minutes or until a toothpick comes out clean
