Orzo and Feta Salad

Orzo is a total pain in the butt to cook, but the tiny noodles really makes for a delicious pasta salad.
Ingredients
- 6 cups Orzo Plain
- 1/2 medium raw Green-bell Pepper
- 1/2 large Peppers, Sweet, Yellow
- 1/2 middle size Red Pepper
- 1/4 cup Green Onions
- 1/4 cup Olive Oil
- 2 tbsp Balsamic Vinegar
- 1/5 tsp Salt
- 1 tbsp Pepper, Black
- 1 tsp Dry Mustard
- 1 cup Feta Cheese Crumbles
Directions
Cook Pasta for 10 minutes or until desired tenderness. Rinse and drain using a sieve (the holes in a collander are too big and the orzo will go down the drain).
Chop the peppers into a fine dice and thinly slice the leeks. Mix into the pasta.
Mix together the olive oil, vinegar, salt pepper and mustard. Crumble in feta and serve
