Oven-Baked Pulled Pork

Our recipe features juicy pulled pork cooked in a tangy-sweet mustard sauce and served alongside crunchy pickles. Instead of using the traditional pork shoulder, we’re subbing in pork sirloin to cut some of the fat and calories.

INGREDIENTS

SERVES 5

  • 7 tbsp Ground Black Pepper
  • 1 tsp Sea Salt
  • 1 tbsp Garlic Powder
  • 1 tbsp Paprika
  • 4 tsp Brown Sugar
  • 3 lb Pork, Leg sirloin tip roast, boneless, separable lean and fat, raw
  • 1 cup cider vinegar
  • 3/4 cup Yellow Mustard
  • 2 tbsp Ketchup
  • 2 clove garlic
  • 1 tsp Kosher Salt
  • 1 tsp Cayenne
  • 1 tbsp Hot Sauce, Original
  • 1 tsp Worcestershire Sauce

DIRECTIONS

1 Preheat the oven at 300°F.
2 Mix 2 tbsp ground pepper, 1 tsp salt, garlic powder, paprika, and 1 tsp brown sugar, then completely coat the surface of the meat all around.
3 Place the meat on a cooking rack above a sheet pan and put in the oven for 6-7 hours.
4 Remove, let cool a few minutes, then pull apart with forks or with your hands using dishwashing gloves.
5 Serve with pickle slices.
6 To make the mustard sauce, mix the cider vinegar, yellow mustard, ketchup, 1 tbsp brown sugar, fresh garlic, 1 tsp salt, cayenne powder, 1 tsp ground pepper, hot sauce and Worcestershire sauce.
7 If you’re feeling ambitious and want to “mop” your meat with mustard sauce with extra flavor, mix beforehand and then every hour, brush the mixture on the meat, re-tenting with foil after. Or just mix the sauce and drizzle a tablespoon over the top of the meat.
