Our recipe features juicy pulled pork cooked in a tangy-sweet mustard sauce and served alongside crunchy pickles. Instead of using the traditional pork shoulder, we’re subbing in pork sirloin to cut some of the fat and calories.



1. Preheat the oven at 300°F.
2. Mix 2 tbsp ground pepper, 1 tsp salt, garlic powder, paprika, and 1 tsp brown sugar, then completely coat the surface of the meat all around.
3. Place the meat on a cooking rack above a sheet pan and put in the oven for 6-7 hours.
4. Remove, let cool a few minutes, then pull apart with forks or with your hands using dishwashing gloves.
5. Serve with pickle slices.
6. To make the mustard sauce, mix the cider vinegar, yellow mustard, ketchup, 1 tbsp brown sugar, fresh garlic, 1 tsp salt, cayenne powder, 1 tsp ground pepper, hot sauce and Worcestershire sauce.
7. If you’re feeling ambitious and want to “mop” your meat with mustard sauce with extra flavor, mix beforehand and then every hour, brush the mixture on the meat, re-tenting with foil after. Or just mix the sauce and drizzle a tablespoon over the top of the meat.
