Oven-Baked Thai Chicken & Rice

A Thai version of a pilaf using green curry paste for flavour.
Ingredients
- 2 tsp Canola Oil
- 2 cups Onions
- 500 g Chicken Breast
- 1/2 cup Basmati Rice
- 2 cups Peppers, Sweet, Red
- 400 mL coconut milk, canned
- 1 can Green Curry Paste
- 1 tsp Lime Juice
- 1 tsp Lime Zest
Directions
1. Preheat oven to 200C/400F
2. Heat oil in a casserole dish over medium heat. Add onion and soften for 5 mins. Increase heat and add chicken and curry paste. Cook for further 2 mins.
3. Add rice and peppers, then stir in lime juice, coconut milk, and 1 cup of boiling water. Bring to the boil and then cover and cook in the oven for 20 minutes or until the rice is soft and fluffy.
4. Garnish with coriander / cilantro.
