Overnight Apple Pie Oat Parfait

Apples contain both malic and tartaric acids, which can help with digestion. High in fiber and low in sugar, this parfait gets most of its sweetness from the apple juice. Ginger and cinnamon give this recipe warm notes of apple pie. Top with a dollop of vanilla yogurt for an a la mode effect.

INGREDIENTS

SERVES 2

  • 1 cup Large Flake Oats
  • 12 oz Apple Juice, Organic
  • 1 medium apple
  • 1/8 tsp ground ginger
  • 1/4 tsp Cinnamon, Ground
  • 1/2 cup Plain Yogurt
  • 1/2 tsp Pure Vanilla Extract
  • 1 tbsp Honey

DIRECTIONS

1 Mix the oats with the apple juice, cinnamon and ginger.
2 Layer the oats and fruit alternately, inside of your jars.
3 Place in the refrigerator overnight.
4 Optional: mix the yogurt, vanilla extract and honey and dollop on top of each parfait.
