Overnight Banana-Chia Breakfast Pudding Bowl With Cacao Nibs and Nuts

The pudding itself if made from a blended mixture of banana, coconut milk beverage, chia seeds (which provide still more protein), coconut nectar, pure vanilla extract and a pinch of sea salt.

INGREDIENTS

SERVES 1

  • 1 banana
  • 1/2 cup Coconut Milk Beverage, Unsweetened
  • 3 1/2 tbsp CHIA SEED
  • 2 tsp Coconut Nectar
  • 1 tsp pure vanilla extract
  • 1/8 tsp sea salt
  • 1 tbsp Cacao Nibs
  • 2 tbsp Peanuts, Roasted, Salted

DIRECTIONS

1 Add the banana, coconut milk beverage (or almond milk), chia seeds, coconut nectar, vanilla extract, and salt to a blender. Cover and puree on high speed until well combined, about 1 minute. Pour into a 1 1/2-cup capacity serving bowl. Cover and chill overnight.
2 Uncover, sprinkle with the cacao nibs and peanuts, and serve.
