Frozen banana turns into creamy soft-serve when blended, which is what gives this parfait its smooth texture -- without the addition of yogurt. Fresh orange juice and blueberries add brightness and immunity-boosting vitamin C. This parfait is filling enough to leave you satisfied until lunchtime.

1. Peel, cut and freeze the bananas overnight.
2. Mix the oats and orange juice and soak overnight.
3. Blend the frozen banana chunks to create a simple banana soft serve.
4. Place a layer of the oat mixture into the mason jars.
5. Top the oat layer with a layer of the banana mixture and then some blueberries.
6. Repeat the layers until you have used all of your ingredients.
