Overnight Peach Melba Oatmeal

Make this traditional dessert a healthy and delicious breakfast. Recipe courtesy of Jackie Newgent, RDN.

INGREDIENTS

SERVES 1

  • 1/2 cup Old-fashioned Dry Oats
  • 1/2 cup Organic Lowfat Milk
  • 1/2 cup Vanilla, Greek Nonfat Yogurt
  • 1 tsp honey
  • 1 peach
  • 1 1/2 tbsp Raspberry jam
  • 1 tbsp raw sliced almonds

DIRECTIONS

1 In the evening, stir together the oats, milk, yogurt, and honey (or coconut nectar) in a bowl or jar until well combined. Cover and chill in the refrigerator overnight.
2 In the morning, top oatmeal with the peach slices, jam, and almonds (preferably toasted). Serve cool.
