Skirt steak is a less expensive cut and appropriate for an everyday meal; the marinade helps soften this otherwise-tough piece of meat. The avocado oil allows the lemony flavor to shine through.



1. Cook lemon slices in a pan over high heat until very browned, about five minutes. Set two aside for garnish.
2. Add cooked lemon to blender with remaining dressing ingredients, and blend on medium until lemon slices have mostly disappeared into dressing.
3. Use 1/4 of marinade to cover skirt steaks; allow to sit for 30 minutes, until they are at room temperature.

- large lemon, sliced into 10 rounds, including peel, seeds removed.
- 4 tablespoons avocado oil
- Juice of 1 lemon (1/4 c)
- 1 clove garlic
- 1/4 tsp salt
- Ground pepper to taste

4. Cook steak over high heat in a pan for 5 minutes for medium rare (recommended), or 8-10 minutes for medium to well done. Allow to rest for five minutes, then slice.
5. Assemble all salad ingredients and toss with remaining dressing. Garnish with reserved charred lemon slices.
