There’s no risk of salmonella in these cookie-dough truffles because they don’t contain eggs. They also don’t contain any gluten or grains! They’re a healthier alternative -- and a very rich one; one truffle is the perfect serving size. Cultured butter gives the dough its creaminess and keeps the chocolate coating from being too firm to crack your teeth into. The only work here is in the rolling and dipping -- no baking involved.



Truffle filling ingredients:

3/4 c almond flour
1/2 c coconut flour
1/2 c cultured butter
1/2 c raw honey
1 tsp vanilla extract
3/4 tsp salt
Optional: 1/2 c dark chocolate

Chocolate coating ingredients:
1 c dark chocolate
2 tablespoons cultured butter

1. Mix all filling ingredients together to form a sticky dough. Refrigerate for 10 minutes.
2. Roll dough into 20 balls and place on baking sheet. Freeze for 10 minutes.
3. Heat chocolate coating ingredients in a pan over low heat or in a Bain Marie.
4. Roll each cookie dough ball in chocolate and place back on cookie sheet. Return finished truffles to refrigerator until ready to eat.
