Paleo Gluten- and Grain-Free Cookie Dough Truffles

There’s no risk of salmonella in these cookie-dough truffles because they don’t contain eggs. They also don’t contain any gluten or grains! They’re a healthier alternative -- and a very rich one; one truffle is the perfect serving size. Cultured butter gives the dough its creaminess and keeps the chocolate coating from being too firm to crack your teeth into. The only work here is in the rolling and dipping -- no baking involved.

INGREDIENTS

SERVES 20

  • 3/4 cup Almond Flour
  • 1/2 cup Organic Coconut Flour
  • 8 tbsp Cultured Butter, Unsalted
  • 8 tbsp Organic Raw Honey
  • 1 tsp pure vanilla extract
  • 1/2 cup Dark Chocolate
  • 1 cup Dark Chocolate
  • 2 tbsp Unsalted Cultured Butter
  • 3/4 tsp Salt

DIRECTIONS

1 Truffle filling ingredients:
2 /4 c almond flour
3 /2 c coconut flour
4 /2 c cultured butter
5 /2 c raw honey
6 tsp vanilla extract
7 /4 tsp salt
8 Optional: 1/2 c dark chocolate
9 Chocolate coating ingredients:
10 c dark chocolate
11 tablespoons cultured butter
12 Mix all filling ingredients together to form a sticky dough. Refrigerate for 10 minutes.
13 Roll dough into 20 balls and place on baking sheet. Freeze for 10 minutes.
14 Heat chocolate coating ingredients in a pan over low heat or in a Bain Marie.
15 Roll each cookie dough ball in chocolate and place back on cookie sheet. Return finished truffles to refrigerator until ready to eat.
