This Paleo vegan bowl has the anti-inflammatory benefits of turmeric and the crunch of low-calorie jicama, which has plenty of healthy fiber.

Directions

1. In a mixing bowl, combine chile paste, mayonnaise, and turmeric
2. Add jicama and toss to coat
3. Place kale in a serving bowl and top with jicama mix and sunomono; tuck enochi mushrooms into jicama.

Notes:
- You'll need about 2 tbsp of enochi mushrooms.
- If possible, use grated fresh turmeric root
