Homemade Thai Panang curry with fresh vegetables, thai basil and mock duck
Ingredients
- 2 cups coconut milk, canned
- 3 can Vegetarian Mock Duck
- 80 g Panang Curry Paste
- 2 tsp Sugar
- 1 cup Thai Holy Basil
- 1 Zucchini, Medium, Raw
- 1/2 cup Onions
- 1 medium Red Bell Pepper, Raw
- 1/2 cup Oriental Bamboo Shoots
- 2 Garlic Clove
- 1 cup Vegetable Culinary Stock Broth
Directions
WARNING: This recipe is pretty spicy! If you prefer, start with 1/2 the amount of curry paste and add more to taste.
Place all ingredients in a large stew pot. Bring up to simmer until vegetables crisp-tender and basil is wilted; approximately 10 minutes. Serve with steamed brown rice.
