Emma's Pancake Mix

homemade pancakes you can change the flour to wholemeal or wheat-free great with icing/powdered sugar or maple syrup or nutella or cocoa powder or sugar & lemon juice
Ingredients
- 2 cups Self-raising Flour
- 3 egg
- 2 1/2 cups Semi-skimmed Milk
- 2 tbsp Vanilla Extract
- 1 sec Olive Oil Spray
Directions
get a jug and mix with electric whisk or hand whisk
add eggs
add Vanilla Extract by Nielsen & Massey
Mix
whilst still whisking add ...
half of the milk
then half of the flour
then half of the milk
then half of the flour
if you want a thicker pancake (american style) add more flour
if you want a thinner pancake (french crepe style) add more milk
heat frying pan on a low medium heat
couple of sprays of oil
pour in mix and keep swirling around in the pan heat until the mix is just about turned from liquid to solid (about1-2 mins) then flip heat for another 1-2 mins you can keep checking the colour
and serve
