Finnish pancake - half batch (fits a 6" skillet nicely) My recipe is less eggy than most. Serve with berries, jam, maple syrup, a sugar and squeeze of lemon, etc. NOTE: I put an extra 1/4c sugar in the ingredients to try to account for these topping calories.

Directions

1.) Set oven to 400°F.
2.) Begin to fix a pot of strong coffee or tea (black)
3.) Put butter in a 6" skillet or baking dish and put into the oven while it preheats.
4.) Whisk together eggs and honey (or sugar), milk, and flour - in that order!
5.) If you timed step 2 properly, your oven is now preheated and the butter is sizzling, just beginning to brown. Pour all the batter into the skillet and bake until golden brown and puffy, approx. 25 minutes.
6.) Let cool for 5-10 minutes before serving with jam and strong black coffee or tea.
