Parchment pouch salmon with veggies and oranges

Steamed salmon, delicious flavour ready in minutes....in the microwave, believe it or not!
Ingredients
- 1/2 cup Carrots, Julienne
- 1/2 medium Onion, Sweet
- 1/2 cup French Green Beans
- 1/8 tsp Corriander Spice
- 1/8 tsp Spices, Ground Black Pepper
- 100 g Orange, Raw
- 3/4 lb Salmon Filet
- 1 tbsp Sherry (wine)
Directions
Thinly slice the onion.
Cut the orange into wedges and remove all the white and membranes.
Fold a 15 x 30 piece of parchment in half and cut a giant heart 1/2 heart shape out of it. Unfold it
Place all the veggies in a bowl and sprinkle with a little salt, some freshly ground black pepper and a pinch of ground coriander seed. Toss the veggies in the spices.
Place the veggies the parchment on one half of the heart along the center line of it. Season the salmon with salt, pepper and a pinch of ground coriander seed and place on top of veggies.
Top the salmon with the orange wedges and sprinkle with sherry.
Fold the other side of the heart over the fish and veggie stack and starting at the top of the heart shape fold up both edges of the parchment. when you reach the bottom of the heart twist it shut.
Place on a microwave safe dish and cook for 5 minutes on high or until fish reaches 131 degrees F.
Open carefully and serve!
